AOP Saint Joseph

Deep red colour. Ripe nose of red fruit, spicy.
Grape varieties: Single Northern Rhône grape variety : Syrah.
Age of the vines: 20 to 30 years
Terroir: In the south of the Saint-Joseph appellation. The vines are planted on steep hills with south south-est exposure (6 ha). Granite soils.
Winemaking: Manual harvest, cooling of the grapes during 12 h at 13° C. 100 % destemming, thermoregulated vats. 15 to 21-day vatting at 30-32° C. 12-month ageing in casks of 228, 400 & 600 liters (15 % new oak).
Tasting: Deep red colour. Ripe nose of red fruit, spicy, full fleshy mouth, nice concentration with well-rounded tannins.
Food pairings: Red meat, grilled meat, casserole, poultry.
Serving temperature: 18°C
Ageing potential: 6 to 10 years
