AOP Châteauneuf du Pape

Very pure nose, mineral and saline coated by a fruit with white flesh.
Grape varieties: Roussanne 50%, Grenache blanc 50%
Age of the vines: 40 years
Terroir: Rolled Pebbles (Cabrières). Clay-Limestone (Palestor).
Winemaking: Harvested by hand. Fermentation: Double sorting of the grapes (in the vines and in the cellar). Direct pressing, alcoholic fermentation in concrete eggs and demi muid. Ageing: 9 months on fine lies, 50 % concrete egg, 50 % demi muid.
Tasting: Very pure nose, mineral and saline coated by a fruit with white flesh. Powerful, elegant and creamy mouth.
Food pairings: Provencal and Mediterranean cuisine, foie gras, lobster, scallops, king prawn.
Serving temperature: between 12°C and 13°C
Ageing potential: 10 years
