Terroir: Plot selection from different zones of the Cornas areas. Granite soils.
Winemaking: Manual harvest, cooling of the grapes during 12h at 13° C. 70 % destemming, thermoregulated vats. 21 to 28-day vatting at 30-32° C. 18-month ageing in casks of 228 liters (30 % new oak).
Tasting: Highly concentrated nose of black fruits and spices. Very powerful and complex mouth with really tight but soft tannins. Very mineral.
Food pairings: Red meat, casserole, cheese.
Serving temperature: 18°C
Ageing potential: 10 to 15 years
