Age of the vines: 70 years

Terroir: Lieu dit : Bois Dauphin, sandy.

Winemaking: Manual harvest with 2 sortings : in the vineyard and in the cellar. Infusion for 18 to 24 days with pumping over and smooth crushing. Ageing for 18 months in Burgundian oak (228L).

Food pairings: Pigeon with truffle from le Mont Ventoux.

Serving temperature: between 16 and 18°C
