Tasting: Bright deep crimson shot through with mauve. Animally, ripe fruit, caramel. Soft attack, good structure, aftertaste of liquorices, notes of toast at the end.
Food pairings: Perfect with casseroles, game, red meat, rib of beef, shoulder of lamb, unpasteurised or hard cheese.
